United Kitchens of India

Written on Wednesday 1 March 2023

This week I dropped into United Kitchens of India, the recently-opened Indian restaurant on the road from Almancil to Vale do Lobo, just past The Village. What an absolute treat! I love this restaurant because the food is really packed with flavour. It’s not your typical Indian restaurant; Narayan is passionate about keeping his food truly authentic to Indian cuisine, so you’re getting the real experience, which is different than other restaurants in the Algarve.

Mrudula brought me into the kitchen to show me how the food is made and it was fascinating and eye-opening to realise the effort that goes into our favourite dishes before they reach our table.

The team of chefs walked me through how Naan bread is made; flattening the dough, seasoning it, then using a Naan cushion to stick the breads to the inside walls of the tandoor (a clay oven shaped like a chimney pot, which reaches a whopping 400°C).

I watched as the chefs prepped a prawn dish; cleaning the prawns, creating a marinade to cover them, placing them on long skewers and into the tandoor to cook for a few minutes before seasoning them further.
Narayan’s signature lamb dish involved placing charcoal into the sealed bowl to lock in smoky flavours.

Thank you to the whole United Kitchens team for sharing their behind the scenes with us! Narayan hosts group cooking classes in the winter months which are fantastic for learning to cook Indian food and having good fun at the same time, but at any time of year you can organise a group class with him if you round up a group of your own.

This is one of two of Narayan and Mrudula’s restaurants, the other located in Aldeia do Golfe on the outskirts of Vilamoura. Definitely worth visiting!
